Ingredients

  • Lard (you can replace it with beef tallow)
  • large free-range eggs
  • 150 g (5.3 oz) unsweetened almond milk
  • 70 g (2.5 oz) extra-fine almond flour
  • 50 g (1.8 oz) double cream
  • 1/2 tsp garlic powder
  • 4 sachets arrowroot powder, (4 TB / 32g / 1.1oz)
  • 1/2 tsp mustard powder
  • Generous pinch of salt

2Put a small amount of lard, about 1/4 teaspoon in every 10 spaces of the muffin tin, alternatively you can use other fats to make it halal. Then put the baking sheet in the preheated oven.

3Mix ingredients such as eggs, almond milk, arrowroot powder, cream, extra-fine almond flour, mustard powder, garlic powder and a generous pinch of salt in a bowl, stir well until evenly mixed and combined. If you have a hand blender, a good blitz will ensure a smooth mixture. Transfer it to a container so it’s easy to pour later.

4When everything is done, remove the hot muffin tray from the oven, use a silicone paste brush to grease the sides of the muffin tin with the melted lard. For the halal version, you can use other types of fat. Pour the batter into each muffin tin.

5Now put in a baking dish filled with dough for 5 minutes. Lower the oven temperature to 160°C (fan oven). This is equivalent to 180°C for conventional ovens (or 350°F/gas mark 4). Bake the Yorkshire Puddings for another 25 minutes at this low temperature. Usually we always rotate my tray halfway through. If you do this, it must be done quickly so as not to change the temperature due to opening the oven door.

6When cooked, turn off the oven and leave the Yorkshire Puddings in the oven for 10 minutes so that the pudding feels dry. The way to get Yorkshire Puddings out of the tray is to push them in with a dessert spoon. Serve warm, if you have made it first, when you want to serve it you have to reheat it for a few seconds in the microwave or oven.
